Whole Wheat Pancakes

Stack of Whole Wheat Pancakes with Syrup

  • 1 1/4 cup whole wheat flour (optional gluten free flour, 1/3 cup potato starch, 1/3 cup tapioca starch, 1/3 cup sorghum flour, 2 tbsp. sweet rice flour)
  • 2 eggs
  • 2 tbsp. vanilla extract
  • 2 tsp. baking soda
  • 360 ml milk
  1. mix the whole wheat flour and baking soda
  2. whisk the eggs, milk and vanilla
  3. add the dry ingredients to the wet and whisk until smooth
  4. heat a non-stick frying pan on medium heat and place a ladle full of pancake batter, cook until light brown on both sides
  5. serve with home-made blueberry syrup (recipe below)

 
Low Sugar Blueberry Sauce

  • Low Sugar Blueberry Sauce5 cups blueberries, washed
  • 5 tbsp. honey
  • 3 cups water
  • 1 tsp. cinnamon
  1. place all ingredients in a sauce pot and simmer for 15 minutes
  2. cool in fridge and blend until smooth once cool

 
 
Vegetable Frittata

  • Vegetable Frittata6 eggs
  • 3 asparagus, diced
  • 1/8 tsp. pepper
  • 2 tbsp. onion, diced
  • 1/8 tsp. salt
  1. pre-heat your oven to 375F
  2. heat up a non-stick frying pan with a metal handle on medium heat
  3. add the onion and asparagus and cook for 3 minutes until softened
  4. add the eggs, salt and pepper and mix
  5. place the frying pan in the oven and cook for 6-8 minutes until the egg is settled
  6. place on a cutting board and cut in triangles

 
Fruit Salad

  • Bowl of Fruit Salad1 pineapple
  • 3 bananas
  • 3 tbsp. agave syrup
  • 1 cantaloupe
  • 1 pint of strawberries
  1. peel the pineapple, remove the core and dice into small pieces
  2. peel the cantaloupe, remove the seeds and dice into small pieces
  3. peel and slice the bananas
  4. wash the strawberries, remove the stems and cut in half
  5. place all fruits in a bowl and mix with agave syrup
