Welsh Cakes

Recipe from Pickering Museum Village

Ingredients

  • 1 cup sugar
  • 3 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp soda
  • 1/2 tsp salt
  • 1 tsp nutmeg, grated
  • 1 cup shortening
  • 2 eggs
  • 1/3 cup milk (approx.)
  • 3/4 cup currants

    Instructions

    1. Mix the dry ingredients thoroughly.
    2. Cut the shortening into dry ingredients.
    3. Mix in eggs and fruit.
    4. Add milk until dough is stiff.
    5. Roll out dough about 1/4 inch thick.
    6. Cut into rounds.
    7. Cook on medium-high heat on a griddle or in a pan until both sides are golden and it is cooked all the way through.
