Whole Wheat Pancakes
- 1 1/4 cup whole wheat flour (optional gluten free flour, 1/3 cup potato starch, 1/3 cup tapioca starch, 1/3 cup sorghum flour, 2 tbsp. sweet rice flour)
- 2 eggs
- 2 tbsp. vanilla extract
- 2 tsp. baking soda
- 360 ml milk
- mix the whole wheat flour and baking soda
- whisk the eggs, milk and vanilla
- add the dry ingredients to the wet and whisk until smooth
- heat a non-stick frying pan on medium heat and place a ladle full of pancake batter, cook until light brown on both sides
- serve with home-made blueberry syrup (recipe below)
Low Sugar Blueberry Sauce
5 cups blueberries, washed
- 5 tbsp. honey
- 3 cups water
- 1 tsp. cinnamon
- place all ingredients in a sauce pot and simmer for 15 minutes
- cool in fridge and blend until smooth once cool
Vegetable Frittata
6 eggs
- 3 asparagus, diced
- 1/8 tsp. pepper
- 2 tbsp. onion, diced
- 1/8 tsp. salt
- pre-heat your oven to 375F
- heat up a non-stick frying pan with a metal handle on medium heat
- add the onion and asparagus and cook for 3 minutes until softened
- add the eggs, salt and pepper and mix
- place the frying pan in the oven and cook for 6-8 minutes until the egg is settled
- place on a cutting board and cut in triangles
Fruit Salad
1 pineapple
- 3 bananas
- 3 tbsp. agave syrup
- 1 cantaloupe
- 1 pint of strawberries
- peel the pineapple, remove the core and dice into small pieces
- peel the cantaloupe, remove the seeds and dice into small pieces
- peel and slice the bananas
- wash the strawberries, remove the stems and cut in half
- place all fruits in a bowl and mix with agave syrup
